Chicken Rice

Making chicken rice is no longer an arduous task but with so many chicken rice mixes available, which is best?  I have used different brands but I do find Ming Ang Hainanese Chicken Rice Mix authentic – this is a Malaysian brand available in Johor. So the next time you take a trip to Malaysia, do stop over at any Ming Ang stores.  (I love their Heong Piah).


Ingredients
* 1 cup Rice, washed and drained
* 1 cup Water
* Chicken Leg, marinated with a little salt
* 2 tabs Light Soy Sauce
* A slice of ginger
* 1 tabsp  Sesame oil
* 1 heap tabsp Ming Ang Hainanese Chicken Rice Mix

Method
1. In the deeper stainless steel pot, put ready washed rice, mix in 1 heap tabsp Ming Ang Hainanese Chicken Rice Mix and pour in 1 cup of water.
2. In the shallower stainless steel pan, place marinated chicken leg and a slice of ginger.
3. Pour half cup of water into ELB. Stack the shallow pan into deep pan and place into the ELB to steam. Turn on the switch.
4. After about 30 minutes, rice should be cook when the light indicator goes off.
5. Let everything sit for another 10 minutes before opening ELB. Fluff the rice.
6. Remove ginger from the chicken leg. Pour a tabsp light soy sauce and a few drops sesame oil over chicken leg. 
7. Serve with dark soy and garlic chili sauce/chicken rice chili sauce.

Let me tell you about Ming Ang’s Hainanese Chicken Rice Mix – It’s filled to the brim with ground garlic and lots of ginger. It tastes authentic and fragrant. However, I must say that the instructions to use the product is vague. But I used one tablespoon chicken rice mix to one cup rice. As usual, wash rice, then add the measured amount (1:1:1 rice to water and chicken rice mix) and cook as you would in the ELB.
